Tilting bratt pan is used for preparing jams, braising and shallow frying, stewing and drying in small or mid capacity processing lines. Uniform heating of the entire surface allows achieving a high quality of the final product. Additional cold water pipe arrangement provides quick cooling of the final product.

Structure and operating principle

The pan consists of two racks, cooking surface, tilting drive and control panel. The racks covered with stainless steel sheets are made of a metal frame where steam and water system with tilting drive is located. Cooking surface is a rectangular weld bath with a steam jacket at the bottom. The temperature of the cooking surface is controlled by the use of a pressure sensor inside the steam jacket.

Additional cold water pipe arrangement provides quick cooling of the final product. There is a heat indicator alarm for a temperature of the cooking area during cooling mode. The 45° tilting is performed by a lead screw powered by the drive.

The cooking process is overseen by one person who from time to time steers the product and controls the dumping of prepared product and loading of the next raw materials portion.
